Apple and banana bites (AIP)

Sweet little treat - cinnamon flavoured apple bites

Last day in the nursery. Parting is hard. Saying goodbyes. Remembering the good times. Shedding some tears. Hugging. Singing together. Wishing all the bests.

You will need (makes 50):
4 medium Pink Lady apples
2 ripe bananas (yellow skin with round brown spots)
1/2 lime
1 scant tsp ground cinnamon
good pinch of fine Himalayan rock salt
4 medjool dates
4 heaped tbsp coconut flour
3 tbsp coconut oil, melted
3 tbsp desiccated coconut

desiccated coconut, to roll (about 2/3 cup)

1. Prepare the dates: Put the dates in a saucepan, cover with filtered water, bring to the boil, then reduce the heat to minimum and gently simmer for 5 mins. Take them out, discard the stones and the skin.
2. Put the prepared dates in a cup, add 6 tbsp of the cooking liquid, immerse and hand lender and blend into a smooth paste. Let it cool down while you are preparing the rest.
3. Peel two apples, quarter them and discard the core and pips. Dice the flesh. Put the diced apples in a mixer, add the banana chunks and chop and mix until creamy.
4. Transfer mixture into a mixing bowl, add the juice of the lime, stir to combine.
5. Peel the remaining apples and grate them (large hole). Add the grated apples to the mixing bowl. Stir to combine.
6. Season with the fine salt and the ground cinnamon. Stir to combine.
7. Add the date paste, the melted coconut oil, mix in the desiccated coconut and gradually add the coconut flour mixing in little by little.
Tip: Depending on your apples and on your dates, how moist there are, you will need more or less coconut flour. The consistency of the dough is perfect when it is not too soft, holds shale well, does not fall apart when rolled into a ball, and still somewhat sticky to pick the desiccated coconut up when rolled into.
8. Using a tablespoon to measure out the dough, dig into the dough, press the spoon full with the dough to the side of the mixing bowl. This way you can measure same amount of dough each time.
9. Roll the dough between your palms to form a ball, roll the ball in the desiccated coconut to cover. Place the rolled ball/bite on a plate.
10. Repeat the step 8 and 9 until you have used up all your dough (I have got 50 bites).
11. Put the bites in glass containers with lids, arrange them in a single layer for now, close the lid and put the containers into the refrigerator for overnight. The bites will firm up a bit, so next day you can arrange them into two or three layers for easy transportation.
